You can redeem the gift card directly on your iOS device. See one of the links at the bottom of this article:

BTW, what version of iTunes/Windows are you using?
This is not a hard gift card but an e-mail with an I-Tunes gift. There is a button on the e-mail that says "Redeem Now" When I click on that button it sends me to an I-Tunes download screen. I am using the latest version of I-Tunes

Right-click the redeem button, copy the URL, paste it into Notepad or the address bar of a browser so you can see the whole thing, and make a copy of the redemption code for your gift. The code is in the URL between ?code= and &.
For example:
You can then follow the instructions in Redeem iTunes or Apple Music Gift Cards and content codes - Apple Support and paste in the copied code at the appropriate moment.

Changing your default browser is another approach that sometimes works. Ideally there would be a support document referenced in the email for when the redeem now link doesn't open correctly in iTunes.
You can always let them know via iTunes Feedback.
